Holy yum - get your (oven) mitts around these bad boys. Triple Nut & Cinnamon Crunch Muffins. Here's how...

Ingredients: 
2 apples, grated
1/2 cup vegetable oil
100g butter, melted
1 tsp vanilla essence
1/2 cup maple syrup
2 eggs
1 cup milk of choice
2 1/2 cups self-raising flour
1 cup Blue Frog Triple Nut & Cinnamon Crunch Granola, plus extra for topping 

Makes 12 if you like 'em large, or 16 if you want to keep it regular.

Method: 
1. Preheat oven to 180C and line 12 large muffin tins with paper cases. 
2. Whisk together oil, butter, vanilla, maple syrup, eggs and milk in a large bowl. Add grated apple and stir to combine. 
3. Stir in flour and granola until combined. 
4. Divide the mix evenly into muffin cases and place in oven. Bake for 30-35 minutes (20-25 minutes for smaller muffins) until cooked through and golden on top.
5. Allow to cool for a few minutes before transferring to a cooling rack, with your house now smelling so damn good. These will keep for 2-3 days in an airtight container.
