We’ve ‘Blue Frogged’ the regular peanut butter cup to create something craaaazy good. You best believe it.
- 3/4c smooth peanut butter (oily is better)
- 1/2c coconut oil, melted
- 1t vanilla extract
- 3 drops liquid stevia ( or sweetener equivalent to)
- 1/4c + 2T coconut oil, melted
- 1T cocoa powder
- 1 drop of liquid stevia
- 3/4 cup Blue Frog Keto granola
Line 12 muffin trays with cupcake liners.
In a medium bowl, whisk together the peanut butter, coconut oil, vanilla and stevia until smooth.
Spoon 3T of the mixture into each liner and refrigerate for at least an hour.
Once this layer is solid, make the chocolate layer by whisking the coconut oil, cocoa powder and stevia together until smooth.
Drop 1T of the granola on top of the peanut butter mixture then pour the chocolate over top.
Chill for another 30 minutes before serving (we know it’s hard, but it’s Worth it).
