Using Blue Frog’s salty sweet granola, create this flavourful mousse to serve at your next dinner party, and perfect for Halloween!
1/2 can caramel sweetened condensed milk
200g puréed pumpkin
Pinch of salt
1 cup cream
1/2 cup Blue Frog Triple Nut & Cinnamon Granola
Whipped cream to serve (optional, but highly recommended)
Heat the condensed milk in a medium saucepan over a medium heat, stirring constantly for 10 minutes using a wooden spoon.
Add the pumpkin and salt and continue to cook and stir for 3 minutes.
Strain the mixture through a fine mesh sieve, using the back of a spoon to push as much through as possible. Allow to cool.
Whip the cream to soft peaks before adding 3 generous spoonfuls to the pumpkin mixture. Fold the rest of the cream through.
Chill in the fridge for at least 4 hours before distributing between 4 glasses with the granola. The granola can be added on top or at intervals to create layers.
Top with whipped cream if desired and serve immediately.
