Cookies for breakfast!? Why not with our hella tasty, better-for-you Keto cereal!
- 2 cups Blue Frog Keto Almond, Peanut & Raspberry cereal
- 1/2c erythritol (or other sweetener, but may need to make adjustments to quantity)
- 1/3c almond meal
- 1/4c ground flaxseed
- 1t baking powder
- 1t ground cinnamon
- Pinch of salt
- 2 large eggs, beaten
- 1/3c smooth peanut butter (oily is better)
- 1/2t vanilla extract
Preheat the oven to 180C and line a baking tray with baking paper.
Combine the dry ingredients in a large bowl. Make a well in the centre and pour in the wet ingredients. Mix well.
Using slightly damp hands or rubber gloves roll the mixture into 12 balls. Each one should be equivalent to a cookie scoop.
Place the balls evenly across the prepared tray and gently press each down to 1cm thickness.
Bake for 15 minutes or until the cookies are golden brown.
Allow to cool for 10 minutes on the tray before transferring to a cooling rack to cool completely. Store in a sealed container (if they make it that far!)
